Delicious and adorable Easter treats for a bariatric diet!

Vanilla Protein Bunny Bites
When Easter rolls around you may not even be thinking about sweets and then you walk into a grocery store and BOOM. Candy displays everywhere, exploding with the wonderful colors of spring. Marshmallow bunnies, jellybeans, giant chocolate bunnies and caramel eggs at every checkout counter. It’s a feast for the eyes and impossible to ignore!

Although these sugary treats seem to be staples of the spring holiday, there are healthy alternatives that can be just as festive! Whether you need Easter treats for a party, a fun activity to do with your kids, or you just want to stick to your bariatric diet, Bari Life’s Vanilla Bunny Protein Treats are super easy, fun and most of all a healthy way to celebrate the holiday!

Supplies needed:

Bari Life Vanilla Protein Pudding Shake Box
Bari Life Vanilla Protein Pudding/Shake – 7 packets come in one box. You only need 3-4 packets to make 24 bunny treats!
Rainbow Sprinkles
or
Easter Sprinkles
Bunny Silicone Treat Mold
2 cups cold water – you could also use milk

Note: If you don’t want vanilla you can always choose your favorite Bari Life Protein Pudding/Shake flavor. You could easily make these with our Chocolate, Strawberry and Cheesecake as well!

The Bari Life Vanilla Protein Pudding/Shakes are the BEST! They are so quick and easy to make. For the pudding consistency, which we will be making today, you only add 4 ounces of water (or milk) for each packet. For a shake consistency you add 8 ounces of water (or milk). The vanilla mix can be used in countless recipes. Not only is this product Gluten Free, but it is Soy Free too! One packet has only 80 calories and 15 grams of protein per serving

We love the bunny silicone treat molds for Spring and Easter, but you can use any silicone treat mold your heart desires! =) There are some pretty adorable options out there.

Add the water

Pour the 4 packets of Bari Life Vanilla Protein Pudding/Shake into a bowl. Add 16 ounces of cold water. Beat with a whisk until the powder has dissolved.

Sprinkle in your favorite sprinkles!

Pour mixture into molds

Pour the pudding into the molds, cover with plastic wrap and freeze until firm. It’s easiest just to leave them in for a few hours…they can stay in the freezer until you’re ready to enjoy! When they’re ready just pop them out. They need to be stored in the freezer.

The best part is that they taste really, really good! These bark bites are just so easy to make. Writing up the instructions takes longer than actually making them!

Note: Don’t use the crystalized sprinkles! See picture below:

The crystal sugar sprinkles began to dissolve and made it so that the bunnies wouldn’t harden all the way.

Instructions

  1. Place silicone mold on baking sheet.
  2. Sprinkle the sprinkles in candy mold.
  3. Pour the 4 packets of Bari Life Vanilla Protein Pudding/Shake into a bowl. Add 16 ounces of cold water. Beat with a whisk until the powder has dissolved.
  4. Pour mixture into molds.
  5. Freeze until set.

5 bunny bites is only 70 calories and has 12.5 grams of protein!

Note: We used 4 packets of the vanilla pudding/shake mix this post and had some leftover. You could probably use just 3 packets, but wanted to fill the molds to the tippy top! You can put the leftover in a bowl and let it set in the fridge for a delicious bowl of pudding later. Add your favorite fruit to spruce it up for an even more filling snack
